Just as in omnivorous diets, entrees provide most of the bulk and protein in a vegetarian diet. The biggest difference is that the vegetarian has a large variety of vegetable dishes to choose from rather than being limited to just a few types of meat. A vegetarian diet allows you greater flexibility to experiment with combinations of flavors, textures, and spices.
Just be sure to include a high-protein vegetable in at least one meal daily.
