Colcannon - Potatoes and Cabbage
Colcannon is a traditional Irish side dish of potatoes and cabbage. It’s
quick and easy to prepare, “sticks to the ribs”, and provides plenty of bulk for a full meal.
Serves 4-6
Irish Potatoes and Cabbage |

| 5 large potatoes | 1 cup soy milk |
| 1 head green cabbage, chopped | 1/4 tsp nutmeg |
| 3 leeks, sliced | salt and pepper (to taste) |
Preparation:
- Cover potatoes with water in a large pot and bring to a boil. Cook
for at least 20 minutes, or until potatoes are tender. - In a separate pot, boil the cabbage in water for 15 minutes.
Drain. - In another pot, cook leeks in soy milk until tender, about 15 minutes
When potatoes have finished cooking, mash them together with leeks, soy milk,
nutmeg, salt and pepper. Stir in cabbage. Add more salt and pepper to
taste and enjoy!
Best if served immediately.
