Spicy Vegetarian Ziti
This spicy Ziti dish is tasty and nutritious and can be prepared in less than 30 minutes - start to finish. The combination of pasta, olives, and tomatos results in a hearty dish that really sticks to your ribs! Complement with a great salad and a bottle of dry red wine, and you’ve got a great vegan meal to start a relaxing evening.

| 1 lb Ziti (or similar tubular pasta) | 2 TBS extra-virgin olive oil |
| 1 (28 oz) can diced tomatoes, drained | 3 TBS chopped fresh parsley |
| 3/4 cup Kalamata olives, halved | 1 TBS capers, rinsed and drained |
| 3 cloves garlic, minced | 1/2 tsp red pepper flakes |

In preparation, put salted water on to boil in a large covered pot for the pasta.
- Heat the olive oil in a large skillet over medium heat.
- Add garlic and red pepper flakes and cook until fragrant (less than 1 min.)
- Add diced tomatoes.
- Simmer for 10 minutes to allow the flavors to mingle.
- Stir in olives, capers, parsley, and salt and pepper to taste.
- Keep warm over low heat while you cook the pasta.
Once the salted water is at a vigorous boil, cook the Ziti until it is al dente - about 10 minutes. Drain well and transfer to your serving bowl. Add the sauce and combine by tossing lightly.
Serve immediately. Leftovers must be refrigerated, but can then be eaten cold - or reheated for tomorrow’s quick lunch.
note - add more red pepper flakes if you want it spicier.
